Simple Roast Chicken Thighs with Garlic and Lemon
The weeknight dinner that requires almost no effort and almost always tastes like you tried.
Ingredients
- 4 bone-in chicken thighs, skin on
- 4 garlic cloves, crushed
- 1 lemon, zested and halved
- 2 tbsp olive oil
- 1 tsp smoked paprika
- Salt and black pepper
- Fresh thyme (optional)
Instructions
- Preheat oven to 200 degrees C.
- Pat chicken thighs dry and place in a roasting tin.
- Mix olive oil, garlic, lemon zest, paprika, salt and pepper. Rub all over chicken.
- Squeeze lemon halves over the top and tuck them in.
- Roast 38-42 minutes until skin is golden and juices run clear.
- Rest 5 minutes before serving.
