Simple Roast Chicken Thighs with Garlic and Lemon

Ingredients

  • 4 bone-in chicken thighs, skin on
  • 4 garlic cloves, crushed
  • 1 lemon, zested and halved
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • Salt and black pepper
  • Fresh thyme (optional)

Instructions

  1. Preheat oven to 200 degrees C.
  2. Pat chicken thighs dry and place in a roasting tin.
  3. Mix olive oil, garlic, lemon zest, paprika, salt and pepper. Rub all over chicken.
  4. Squeeze lemon halves over the top and tuck them in.
  5. Roast 38-42 minutes until skin is golden and juices run clear.
  6. Rest 5 minutes before serving.
