One-Pan Mediterranean Baked Eggs

Shakshuka-adjacent but simpler. Works for breakfast, lunch or dinner.

Ingredients

  • 4 large eggs
  • 1 tin chopped tomatoes
  • 1 red pepper, diced
  • 1 small onion, diced
  • 2 garlic cloves, sliced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Olive oil
  • Feta cheese
  • Fresh parsley

Instructions

  1. Heat olive oil in a wide frying pan over medium heat.
  2. Soften the onion and pepper for 5 minutes.
  3. Add garlic, cumin and paprika. Cook 1 minute.
  4. Pour in tomatoes, season well, simmer 8 minutes.
  5. Make 4 wells and crack an egg into each.
  6. Cover and cook on low 5-7 minutes until whites are set.
  7. Crumble feta and scatter parsley. Serve with crusty bread.
