One-Pan Mediterranean Baked Eggs
Shakshuka-adjacent but simpler. Works for breakfast, lunch or dinner.
Ingredients
- 4 large eggs
- 1 tin chopped tomatoes
- 1 red pepper, diced
- 1 small onion, diced
- 2 garlic cloves, sliced
- 1 tsp cumin
- 1 tsp smoked paprika
- Olive oil
- Feta cheese
- Fresh parsley
Instructions
- Heat olive oil in a wide frying pan over medium heat.
- Soften the onion and pepper for 5 minutes.
- Add garlic, cumin and paprika. Cook 1 minute.
- Pour in tomatoes, season well, simmer 8 minutes.
- Make 4 wells and crack an egg into each.
- Cover and cook on low 5-7 minutes until whites are set.
- Crumble feta and scatter parsley. Serve with crusty bread.
